Gluten Free, Frozen Fruit “Ice Cream” Sandwich Recipe

If you follow my blog, you know that my family eats clean. Sometimes I wish we could dive into bag of Oreos or vanilla wafers, but alas due to medical concerns, we are on a corn free, gluten free, low sugar lifestyle. Notice I didn’t say diet. We are going to be eating like this for our life, not just a few weeks. We have been on this diet for two years. It’s not that bad once you get a hang of it and be willing to change for the wellness of your family.

You have to think about substitution rather than giving up things. And that is where this recipe comes in.

We didn’t give up dairy. In fact, we eat it occasionally still. Last night, in fact, we ate cheese on our “taco” salad – minus the corn chips. But, we do try to stay away from it as much as we can.

A few years ago, while working as the Lifestyle Editor for Parenting magazine, I was introduced to the best kitchen appliance I’ve ever used. YONANAS! In fact, I’ve written about it a couple of times for various publications over the years. I was I was a paid spokesman for them. I’d rock at that job! Ha!

Anyways, the idea for this machine is that it makes frozen whole fruits into a creamy mixture that tastes just like ice cream! I promise. In fact, Kai’s BFF Beahr, who is dairy free, asks for me to make it each time he visits because it tastes so much like ice cream.

The base of the “ice cream” is frozen bananas. Then you add in what other frozen fruit you love. We stick mostly to bananas and strawberries. We then top it off with some chocolate chips.

Last year, my mom, who also has a machine, made “ice cream” sandwiches for Kai using gluten free cookies and yonanas. It was heaven. This weekend, I thought I’d surprise Kai and make a few for him, while he and my husband were at the arcade being boys.

What’s really cool is that you don’t need this special machine to make this. You can use a blender or food processor to mash up and cream up the frozen fruit.

Ingredients:

  • Frozen bananas
  • Frozen strawberries
  • Gluten free cookies (homemade or store bought) – I use Enjoy Life brand
  • Chocolate chips – I use the Enjoy Life brand

Instructions:

Step 1: Blend your frozen fruit together using a Yonanas machine, blender or food processor.

Step 2: Top one of your cookies with a spoonful of your frozen fruit mixture.

Step 3: Place a second cookie on top.

Step 4: Spread chocolate chips on your plate. Then roll the edges of your “ice cream” sandwich in the chocolate chips.

Step 5: Place back in the freezer for about 10-15 so the chocolate chips freeze to the frozen fruit.
