I shared this with my buddy Mark, who gobbled it up. I actually sent it home with him to enjoy! Didn’t want him to eat and drive. haha!
It was really a quick recipe to make. It may not be the healthiest, but it was tasty! I was afraid the Guinness would overpower the flavor, but it really didn’t. My favorite was the spinach tortillas. Mmmmmm!!!! Ps. The beer is just for flavoring and it’s perfectly fine for the kids to eat.
I also loved using my Kitchen Aid. I don’t really get to use it very often. I got it when I worked for Parenting magazine. We used it for one of our photo shoots. Lucky me, for real! I also love that it’s (apple) green. It’s perfect for St. Patty’s Day, don’t you agree? After using this, I think I should use it more often. It’s so simple and smoothes it all out. I think there are more cookies or brownies in the future.
I made these shamrocks using a cookie cutter. I had to press down really hard to be honest, but after some practice, I got the hang of it. I then spread olive oil on the spinach tortillas and then baked it in the oven for just a few minutes. Be careful, they burn quickly!
