Good Vibes Zucchini Double Chocolate Muffin Recipe
Thanks to Jessica Seinfield’s book, I’ve been sneaking in veggies into Kai’s food since he was a baby.
My latest concoction is zucchinis in double chocolate chip muffins that I made for onlinelabels.com. Click here for the complete recipe and how-to.
Ingredients:
- 2 tsp coconut oil
- 1 zucchini
- 1 ½ cup flour, muffin mix or gluten free baking mix3 tbsp. cocoa or cacao powder
- 1 egg
- ½ tsp baking powder (depending on if your mix or flour doesn’t have it)
- ½ cup chocolate chips
- 1 tsp vanilla
- 4 tbsp. honey (or to taste)
Instructions:
Step 1: Melt your chocolate chips and coconut oil in the microwave.
Step 2: Puree 1 zucchini. Squeeze out all of the water.
Step 3: Mix together all of the ingredients.
Step 4: Pour the mixture in a lined muffin tin.
Step 5: Put in 350 degree oven for 10-12 minutes.
After I made the muffins, (which are so tasty btw. promise, you’ll have no idea that there are zucchinis inside), I wanted to jazz them up with fun labels made from onlinelabels.com newest offering…chalkboard labels (OL3285CB 8.5” x 11” full sheet and OL3287CB 2” circles)
Step 6:Use craft punchers on the full sheet to make some cute shapes.
Step 7: Write fun messages on the labels with a chalkboard marker.
Step 8: Press half of a paper straw in between two labels.
Step 9: Stick the sign into the top of the muffin.
